Tofu Chocolate Mousse

Today is National Chocolate Mousse Day. (I didn’t make that up. Don’t know who decreed it, but way to go!)

Celebrate with this recipe that cuts the fat and calories with tofu. (Oh come on. Just try it. I’m a vegetarian and live on the stuff. It’s good!) The recipe comes to me from House Foods Tofuand uses their silken variety. Thank you, House Foods. (But you can use any brand you like.)

House Foods Chocolate Mousse

Serves 4-6; Prep Time: 15 min

Ingredients:

1 package 14 oz. House Foods Soft Tofu

¾ cup of semi-sweet chocolate chips

¼ cup of milk (can substitute coconut milk)

½ tbsp. vanilla

1½ tsp. ground cinnamon

1 tsp. ground cardamom (optional)

Method:

Open the tofu package and strain water.  Remove tofu from package and blend in blender until smooth.  With the stove on low or simmer, melt the chocolate-chips and milk in a pot stirring until smooth. Add in tofu mixture and stir until it is blended evenly with the chocolate.  Stir in vanilla, cinnamon (and cardamom – optional).  Quickly remove from heat, cool and set in fridge until becomes thick like a mousse.

Prefer a pudding to a mousse?  If so, serve immediately after it has had a chance to cool out of the fridge.

  2. I learned a health trick while living in Alaska, even during the winters. I began eating excessive amounts of chocolate, and found that it is a good cure for SAD (Seasonal Affective Disorder), or Winter Blues. Very tasty, too. Bon Appetit!

  3. Hi Wendy! First off, there are SO many cool things about your comment, not the least of which is that you lived in Alaska! Wow! Of course, I also love the part about consuming excessive amounts of chocolate! But, while it may be great for Seasonal Affective Disorder, may I ask what it did to your thighs? Eh, who cares?
